Parmesan Crusted Salmon

Serves 4


Ingredients

  • 4 salmon filets

  • 1 cup panko breadcrumbs (I use GF)

  • ¼ cup breadcrumbs (I use GF)

  • 40g grated parmesan (1/2 cup fresh grated)

  • 2 tbsp finely chopped parsley (I used dried)

  • Sprinkle of garlic salt (or I use @mingleseasonings)

  • Salt + Pepper

  • 2 tbsp Olive Oil

  • Salad to serve

Method

① Preheat oven to 220degrees C. Line an oven tray with baking paper.

② Pat dry the salmon fillets with paper towel and place on lined baking tray.

③ In a bowl combine the panko and breadcrumbs, grated parmesan, parsley, garlic salt and salt and pepper. Add olive oil 1tbsp at a time and mix to coat the crumbs.

④ Spoon the crumb over the salmon fillets evenly.

⑤ Bake in a hot oven for 10mintues until the crumb is crunchy and golden and the salmon is cooked through.

⑥ Serve with a salad and pesto mayonasise (from Aldi).
