Veggie Pesto Pasta Bake

Serves 6


Ingredients

  • 250g pasta, cooked

  • 200g pumpkin, roasted

  • 1 carrot, grated

  • 1 zucchini, grated

  • Baby spinach - a good handful

  • 4 tbsp basil pesto

  • 100g halloumi, fried (or more if you love it!)

  • 125ml chicken or veggie broth/stock

  • Cheese to top - I used parmesan + grated

Method

① Preheat oven 180degrees C.

② Prepare ingredients - cook pasta, roast pumpkin, grate carrot + zucchini, fry halloumi.

③ In a large oven proof baking dish, layer prepared ingredients - cooked pasta, roasted pumpkin, baby spinach, grated carrot + zucchini, fried halloumi. Pour over stock. Top with chosen cheeses.

④ Bake in oven until cheese is melted and golden. Or you can even use the griller?
